Like Whiskey on the Rocks? This High Proof Wheater Is Perfect With an Ice Cube
Colorado has been a big bourbon state for years—both in terms of the amount of whiskey consumed and the number of distilleries located there—but it’s probably better known for the American single malt thanks to the dominance of Denver-based distillery Stranahan’s. Still, you can find some excellent bourbon, rye, and wheat whiskey being produced in the Centennial State, and another distillery in the Mile High City that's worth your attention is Laws Whiskey House.
Laws has been around since 2011, working with local Colorado farmers to source grains like corn, rye, wheat, and barley for its various whiskey expressions. The core lineup consists of bourbon and rye whiskeys that come in three forms—straight, cask strength, and bottled-in-bond. The rye is made from a mash bill of 100 percent heirloom rye, while the bourbon is produced using a four-grain recipe of 60 percent corn, 20 percent heirloom wheat, 10 percent heirloom rye, and 10 percent heirloom malted barley.
That bourbon is a key component of the distillery’s new limited-edition whiskey called Super Wheater. The whiskey's a blend of the four-grain bourbon and the distillery’s Centennial Wheat Whiskey, a bottled-in-bond expression made from 100 percent soft white centennial spring wheat that's aged for more than seven years.
Super Wheater is part of Laws’ Origin series, which started the year the distillery was founded with less than 30 barrels selected from the first distillation run. In 2009, a single barrel whiskey was released as the first Origin series whiskey, followed by a few more over the subsequent years leading up to this new release.

Which brings us to Super Wheater. The liquid in the bottle ranges in age from five to 12 years old and is bottled at a relatively high, but not aggressive, 60.8 percent ABV. The palate is pleasantly sweet and grainy with no markings of an immature whiskey. There are notes of juicy berries, vanilla, honeycomb, and apple that define the profile, with just a touch of bitter tannin and licorice on the finish. Add a little bit of water or pour over a large ice cube, and the heat retreats a bit while the palate opens up even further to reveal fruit and sweet notes. It's a very nice sipping whiskey and an artful blend of two very different styles of American whiskey.
Super Wheater is available now for $130 in select stores around the country and at the new Laws Whiskey Sanctuary visitor center and cocktail lounge at the distillery.
