The Pioneer Woman Says 'No Appetizer Disappears Faster' Than Her Cheesy, Flaky Puffs & They're so Easy to Make

If you don’t have a signature appetizer — you know, one that Lorelai Gilmore would talk about for ages if Emily served it at a Friday night dinner on Gilmore Girls — then let Ree Drummond introduce her to one of hers. The Pioneer Woman claims “no appetizer disappears faster” than these flaky puffs, and this recipe has plenty of tips and tricks to make baking it even easier.

Drummond shared a picture of her Spinach Puffs on The Pioneer Woman Magazine’s Instagram, and they look so flaky and delicious. “No appetizer disappears faster than a flaky pastry stuffed with cheesy filling,” Drummond captioned the post. “So be prepared for these creamy spinach puffs to fly off your hors d’oeurves tray!” We haven’t even read the full ingredients yet, and we already fully believe it because these look amazing!

This dish, which Drummond says are “more like loaded pastry cups,” look fancy, but have easy fixes and store-bought ingredients that make it easier. Start by using a packaged puff pastry dough, which you will cut into 24 squares and gently press into muffin cups.

For the filling, melt butter and other ingredients in a small skillet, mixing it all together then pouring into a large bowl to cool. Squeeze one package of frozen spinach, then finely chop it. Add cream cheese, feta, lemon zest, spinach, and other ingredients to the butter mixture, mashing everything together “until mostly smooth,” then fill the pastry cups.

The final touches include an egg wash and sprinkle of parmesan before popping in the fridge for 30 minutes. (Note: you can store these in an airtight container in the fridge for up to 3 days and the freezer for up to 3 months if you want to make these ahead!) Then, bake them in the oven until golden brown and serve warm. Guarantee these will not get cold before they’re all gone!
