Massage your Brussels sprouts for a better, more flavorful salad
Earthy and subtly sweet with pleasant hints of bitterness, shredded raw Brussels sprouts make excellent slaw-style salads. For better flavor and texture, the cooks at Christopher Kimball’s Milk Street massage shredded sprouts with rice vinegar and soy sauce, tenderizing the sprouts and tempering their cabbage-y qualities. Fresh ginger and chilies are added and a mixture of sizzling oil and sesame seeds is drizzled on to draw out the flavor of the aromatics. The sprouts are lightly cooked by the hot oil, each bite imbued with nutty, toasty notes. Optional garnish is chopped fresh cilantro.
