One of my best foodie friends and mentors, Jenny Morris, has a contagious lust for life. She once served me beetroot cooked in orange juice. The combination of beetroot and orange is perfect. Now, I make a dressing using orange juice and marinate the cooked beetroot slices in it. Delicious!
