Restaurant group opening new eateries in Albany, Latham

ALBANY, N.Y. (NEWS10) -- A Capital Region restaurant group is working to open two more eateries in Albany and Latham. The Rojas Corporation, owned by Roy Rojas, is opening up La Polleria Peruvian Rotisserie and Taqueria at 216 Lark Street in Albany and Las Margaritas Mexican Cantina at 710 Loudon Road in Latham.

The Rojas Corporation also owns Margarita City in Colonie, La Fiesta in Clifton Park, and Las Margaritas Mexican Cantina in Slingerlands. The former Sushi X building at 710 Loudon Road will be the second location of Las Margaritas.

Leah Duell, the marketing coordinator for the Rojas Corporation, said La Polleria Peruvian Rotisserie and Taqueria will be serving Peruvian-style rotisserie chicken with different seasonings and sauces, sides such as salads and fries, and street-style tacos. The eatery will have some inside seating but will mostly offer takeout and be open late nights.

Las Margaritas in Latham has been in the works for almost a year but the opening was delayed as they weren't quite done with adding additions and visuals to the space, said Duell. This restaurant will be very similar to the Slingerlands location, but it'll have different food and drink specials. There will also be an event space and a patio area open for next summer.

The Las Margaritas menu features tacos, nachos, burritos, quesadillas, enchiladas, fajitas, brunch items, and more. You can view the full menu on the Las Margaritas website.

The Rojas Corporation is planning to open both La Polleria Peruvian Rotisserie and Taqueria and Las Margaritas in Latham in November. As for the future, Duell said they would love to open more restaurants and may open up a food truck next summer.
