Giada De Laurentiis’ Bright Summery Sicilian Pesto ‘Hits All the Flavor Notes’ Thanks to Its 7 Simple Ingredients
Pesto is one of those sauces that just screams summer. It’s fresh, herbaceous, and spicy thanks to the raw garlic, and goes so well on pasta or as a spread on summer sandwiches. But Giada De Laurentiis is here to teach us that there’s another pesto recipe we should have on our radar this season: Pesto Alla Trapanese. This is a Sicilian pesto that’s loaded with so many delicious flavors, this may become your new go-to sauce.
“This bright summery Sicilian pesto, known as Pesto Alla Trapanese, is a little different than the verdant green pesto we all know and love: it stars cherry tomatoes, toasted almonds, basil, garlic, red pepper flakes, olive oil and Parm,” the caption of a recent Giadzy post reads. “The result is a sauce that hits all the flavor notes of fresh, sweet, herbaceous, spicy, and savory… and it’s perfect served on pasta. Serve this up as a warm pasta, or as a pasta salad; this is one of those dishes that is delicious no matter what temperature you eat it.”
And one of the best parts about Pesto Alla Trapanese is that it comes together in about 10 minutes, making it as quick and easy as its basil pesto cousin. You first want to start by pulsing the toasted almonds and garlic together in a food processor until they’re both finely chopped. Then add your basil, tomatoes, salt, and pepper and pulse again to combine.
While the ingredients are whirling in the processor, slowly add the olive oil in a fine stream until the contents form that sauce consistency. Remove the pesto from the food processor and add in your grated parmesan cheese to finish.
